- 4 large potatoes
- Vegetable oil (for frying)
- Willy Nilly French Fries seasoning
Instructions:
- Prepare the Potatoes:
- Peel the potatoes (optional) and cut them into even sticks about 1/4 inch thick.
- Place the cut potatoes in a large bowl of cold water and let them soak for at least 30 minutes (this helps remove excess starch and makes them crispier).
- Parboil the Potatoes:

- Drain the potatoes and place them in a pot of boiling water.
- Boil for about 3-4 minutes, until they are just starting to soften.
- Drain the potatoes and let them cool on a paper towel-lined baking sheet.
- Fry the Potatoes:

- Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C).
- Fry the potatoes in batches for about 4-5 minutes, or until they are light golden but not fully crisp.
- Remove the fries with a slotted spoon and let them drain on a paper towel-lined baking sheet.
- Second Fry:

- Increase the oil temperature to 375°F (190°C).
- Fry the potatoes again in batches for another 2-3 minutes, or until they are golden brown and crispy.
- Remove the fries with a slotted spoon and let them drain on a paper towel-lined baking sheet.
- Season and Serve:

- Immediately sprinkle the hot fries with the prepared French fries seasoning.
- Toss the fries gently to coat them evenly with the seasoning.
