Crunchy Roast Potatoes


Ingredients:

  • 1.5kg/3lb potatoes
  • 1 packet of Willy Nilly Roast Potato Seasoning
  • 4 tbsp vegetable oil

Instructions:

  1. Preparation
    • Preheat the oven to 220°C (200°C Fan) / Gas 7
    • Peel and cut the potatoes into golf ball-sized pieces.
    • Preheat a large, shallow roasting tin in the oven until hot.
  2. Par Boil the Potatoes
    • Place the potatoes in a saucepan of cold, salted water. Bring to a boil, then reduce the heat and simmer for 3-4 minutes, just until the edges start to soften.
    • Drain the potatoes in a colander, then return them to the saucepan. Shake the pan to roughen the edges. Sprinkle in Willy Nilly Roast Potato Seasoning and shake again until well coated.
  3. Roast the Potatoes
    • Add the oil to the tin and heat for 5 minutes until smoking. Carefully add the potatoes, turning them in the hot fat until well coated.
    • Roast in the oven for 15 minutes, then remove the tray and turn the potatoes to coat them in the fat again.
    • Return to the oven for another 15 minutes, then turn the potatoes again.
    • Roast for a final 10 minutes, or until the potatoes are golden brown and crisp.
  4. Serve:
    • Serve piping hot.
