Chicken Piri Piri



Ingredients:

  • 4 chicken legs (thigh and drumstick attached)
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2-3 tablespoons Willy Nilly Piri Piri spice mix
  • 4 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1/4 cup white wine vinegar
  • Salt and pepper to taste

Instructions:

  1. Marinate the Chicken:
    • In a large bowl, combine olive oil, lemon juice, Piri Piri spice mix, minced garlic, chopped red bell pepper
    • Add the chicken legs to the bowl and coat them well with the marinade.
    • Cover and refrigerate for at least 2 hours, preferably overnight.
  2. Cook the Chicken:
    • Preheat your grill to medium-high heat.
    • Remove the chicken from the marinade and season with salt and pepper.
    • Grill the chicken for about 30-35 minutes, turning occasionally, until the chicken is cooked through and has a nice char.
    • Alternatively, you can bake the chicken in a preheated oven at 400°F (200°C) for about 35-40 minutes.
  3. Prepare the Piri Piri Sauce:
    • While the chicken is cooking, blend the remaining marinade with white wine vinegar until smooth.
    • Pour the sauce into a small saucepan and simmer over medium heat for 5-10 minutes until slightly thickened.
    • Adjust seasoning with salt and pepper if necessary.
  4. Serve:
    • Serve the grilled chicken with the Piri Piri sauce drizzled over the top or on the side.
    • Enjoy your Piri Piri chicken with a side of your choice, such as rice, salad, steamed or grilled vegetables, French fries, or baked potatoes
