
Ingredients:
- 4 chicken legs (thigh and drumstick attached)
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 2-3 tablespoons Willy Nilly Piri Piri spice mix
- 4 cloves garlic, minced
- 1 red bell pepper, chopped
- 1/4 cup white wine vinegar
- Salt and pepper to taste
Instructions:
- Marinate the Chicken:
- In a large bowl, combine olive oil, lemon juice, Piri Piri spice mix, minced garlic, chopped red bell pepper
- Add the chicken legs to the bowl and coat them well with the marinade.
- Cover and refrigerate for at least 2 hours, preferably overnight.
- Cook the Chicken:
- Preheat your grill to medium-high heat.
- Remove the chicken from the marinade and season with salt and pepper.
- Grill the chicken for about 30-35 minutes, turning occasionally, until the chicken is cooked through and has a nice char.
- Alternatively, you can bake the chicken in a preheated oven at 400°F (200°C) for about 35-40 minutes.
- Prepare the Piri Piri Sauce:
- While the chicken is cooking, blend the remaining marinade with white wine vinegar until smooth.
- Pour the sauce into a small saucepan and simmer over medium heat for 5-10 minutes until slightly thickened.
- Adjust seasoning with salt and pepper if necessary.
- Serve:
- Serve the grilled chicken with the Piri Piri sauce drizzled over the top or on the side.
- Enjoy your Piri Piri chicken with a side of your choice, such as rice, salad, steamed or grilled vegetables, French fries, or baked potatoes
